DRESSINGS AND SEASONINGS from the Living Way

 

SAVORY TOMATO SAUCE
1 medium - large tomato
1 medium carrot
1/3 cup cashews (soaked, rinsed, drained)
1 small rib celery
2 large cloves garlic
1-2 Tbsp Italian seasoning or other herb(s)
of choice
few stems parsley
1/4 cup purified water (approx)

Blend all ingredients in a high speed blender,
adding a small amount of water if necessary to achieve
desired thickness. Use as a conventional sauce or as
a salad dressing, topping for raw wraps or a dip.

TOMATO-TAHINI TOPPING
1 small- medium tomato
2 Tbsp. raw tahini
2 large garlic cloves
few slices onion
1-2 tsp. curry powder or herbs of choice
1 tsp. fresh lemon juice
Few shakes of Sea or Himalayan salt

Blend ingredients in a Nutribullet or high speed blender,
adding a small amount of water if necessary to achieve
desired thickness.

HERB VINAGRETTE
1 cup filtered water
1/2 cup fresh lemon or orange juice
1/3 cup omega-rich oil (hemp, flax, sunflower, safflower)
1/3 of a small-medium red onion
2 stalks
1 leaf kale or collards
3 large cloves garlic
1/4 cup fresh herbs of choice
1 Tbsp parsley
1 tsp. grated ginger
1 tsp. cumin
dash cayenne pepper

In a blender, place water and citrus juice. Chop onion, celery, kale, garlic, and herbs. Add to blender along with spices. Blend until smooth.

HOMEMADE CURRY POWDER
4 Tbs. ground turmeric
3 Tbs. ground coriander
2 Tsp. each: ground cumin, ground ginger, cayenne pepper
1Tbs. each: white pepper corns, whole cloves, ground cardamom, ground mace, fenugreek
1 Tbs. each dried, fine herbs: thyme, oregano, sage, rosemary, marjoram, basil

Place all ingredients in a blender and grind until a fine powder. Store in a tight container.

ROSEGARDEN HERB SEASONING
1 Tbsp. rosemary
1 Tbsp. thyme
1 Tbsp. basil

Combine ingredients and use as seasoning for salads.

DRY HERB SEASONING
1 Tbs. each: summer savory, tarragon, chervil, basil, chives, and rosemary.

Combine ingredients and use as seasoning

ITALIAN HERB DRESSING
3 Tbsp.. lemon juice
1/4 cup dry mustard
Pinch cayenne pepper
1/8 Tsp. white pepper
2/3 cup olive oil or 1/3 Cup olive oil and 1/3 Cup water
1 Tbs.. honey
1 Tbs.. fresh, minced chives
1 Tbs.. fresh minced parsley
1 clove minced garlic
1/4 Tsp. crushed oregano
1/4 Tsp. crushed tarragon

Whisk together lemon juice, mustard, pepper and cayenne. Pour in oil gradually, whipping or beating it in. Stir in herbs. Makes 1 cup.

FRESH HERB SALAD DRESSING
1 Clove minced garlic
1 Tsp. each (fresh, chopped):basil, chives, parsley, chervil
3/4 Cup olive oil ( or 1/2 oil and 1/2 water)
1/4 Cup lemon juice
Pepper to taste

Combine in a jar and shake well.

FRENCH DRESSING
2 Tbs.. fresh, minced herbs
3/4 Cup olive oil
1/4 Cup lemon juice
Combine ingredients. Shake well. Serve on fresh, garden salads.

TAHINI DRESSING
1 Cup oil ( half flax oil, half olive oil)
1/2 Cup Lemon juice
1/4 Cup Tahini
2 Cloves garlic (optional)
2-3 Tbsp. honey
1/2 tsp. Ground cumin
2 Tbsp. Chopped parsley (optional)

Combine all ingredients in blender and process until smooth. For thcker consistency, use less oil (about 1/4 cup less).

SPANISH DRESSING
1 1/4 Cup Celery, chopped
1/2 Cup Green pepper, diced
1 Medium onion
1 Clove garlic, finely chopped
1 Tbsp. Parsley
1/2 tsp. Oregano
2/3 Cup Lemon or lime juice
2/3 Cup Oil (flax or olive, 1/2 each)
1-1/2 Cup Tomatoes, cut
1 tsp. Chili powder
1/3 Cup honey or Stevia equivalent
Dash of cloves

Place all ingredients in blender and blend well.

GREEN MAYONNAISE
4 Tbsp. Ground flaxseed
5 Tbsp. Water
1/2 tsp. Powdered mustard
2 Tbsp. Lemon juice
1/8 tsp. cayenne pepper
2 1/2 Tbsp. Olive oil
1-2 tsp. Honey or Stevia equivalent
2 1/2 Tbsp. hemp oil
1 tsp. Water (if needed)
2 Tbsp. Fresh, minced parsley or herb of choice (watercress, basil, tarragon, chives, etc.)

In a blender, combine water and flaxseed and blend well. Add mustard, lemon juice, greens and honey or Stevia. Blend until smooth. Gradually pour olive and flax oils in a smooth, steady stream into blended mixture. As mixture thickens, push down from sides of blender, using a spatula. Continue blending at high speed until oil is emulsified. A Tbsp. of hot water may be added to stabilize the mixture, if it shows signs of separating. Makes about one cup.
