2. Ministry update  

Dear Friends,

Spring has officially arrived in Maine, though temperatures are
yet cold, winds sometimes brisk, and snow still in the forecast.
While we tough through the last remnants of winter, we rejoice
to see the ground again as well as some friendly greenery popping
up. With the arrival of warmer weather, I've happily been out
surveying the yard and accessing the affects of the long, hard
winter on our perennials, herbs, fruit trees, berry bushes, compost
pile, etc. One crisp morning I pruned our fruit trees (two apricot,
two prune, two apple) as well as our raspberry and blackberry
bushes. Much to our disappointment, our favorite apple tree suffered
the loss of a large limb in a recent snow storm. The tree is hanging
on with difficulty, considering it is still recovering from a lightning
strike of several years ago and a bad case of scab. Suffice to say,
we hope not to lose a tree that has come to be a friend of many
years.

While we wait on the weather and plan our 2009 garden, our ministry
is enjoying healthy growth! After thirteen years of dedicated effort,
the health message is catching on. We are seeing an increase of
inquiries, counseling, web traffic, and attendance of our monthly
health meetings. Recently we held a local 'home-health-meeting'
which was attended with nearly ten people who were attentive as
well as inquisitive. Judging from the response, the live food lifestyle
is gaining attention. If you are interested in hosting your own home
health meeting with us Living Way-ers, let us know. Good things
can happen!

Last Saturday we attended the Fourth Annual Food Conference
in Unity, Maine. This event is always one of our favorites, since
it affords us the opportunity to talk with those who are the nitty-
gritty in Maine agriculture: farmers, growers, business people,
organizations, and politicians. Speakers and attendees alike share
their concerns and goals in their mutual quest for a superior quality
of life. Given the popular slogan, 'Maine...the way life should be,'
good stewardship of our resources becomes a multifaceted issue.
Quality of life includes land/land use, farming techniques, seed
saving, safe/accessable water supply, etc. which leads to the
all-important commodity we know as food. Who likes to eat and
eat good food? Local access to food, sustainability, and good
old fashioned self-sufficiency are issues worth considering,
especially in today's economy. It is good to consider from whence
comes our food, at what price, and if it is safe to eat. This is
food-for-thought that is well worth pondering. As it turned out, the
Food Conference was sparsely attended this year. Why, we don't
know. However, the issues associated with food go on. Eating

This is an outstanding documentary that addresses important
'food factors' on an 'up-close-and-personal' level. If you have never
seen this movie, we encourage you to do so. It is an educational
experience that could change your life.

Here is more good news for you: Dr. Brian Clement, director of the

Hippocrates Health Institute,
is making a trip through New England
this fall and will be guest speaker at our September HANDS-ON
HEALTH meeting. This is a superb opportunity to meet the head
of one of the world's most prestigious nutritional institutions.
The Hippocrates Health Institute was founded many years ago by
Dr. Ann Wigmore who is considered to be one of the pioneers of the
living foods movement. Her life and work with living nutrition is a
testimony that has inspired, influenced, and shaped much of the
raw food movement. Brian Clement's presentation promises to be

On a local note, I was a guest presenter at the World of Women's
Wellness in Waterville this past Saturday. Hannaford Supermarket
of Elm City Plaza asked me to be part of their booth by 'talking
healthy' and demonstrating how to make a green smoothie. So it
was that I blended a total of five smoothies, talked to at least two
hundred people, poured over 150 samples, and passed out the
recipe for my 'Citrus Smoothie' in the course of almost three hours.
Response from the crowd was warm and enthusiastic with many
people tasting a green smoothie for the first time. We thank
Hannaford's for their interest in healthy living and giving me the opportunity to present. Consider supporting their efforts with your
organic purchases. Thank you, also, to Channel 7 for filming the
event!

With garden season coming on, plan to attend this week's
HANDS-ON HEALTH meeting, 'Gardening for Life' with guest
speaker, Caragh Fitzgerald from the agricultural division of the
University of Maine Extension Service. Whether you are new to gardening or not, Ms. Fitzgerald's professional presentation will
give you practical knowledge into the basics of gardening with an
emphasis on an organic approach. Her talk will include colored
slides and hand-outs. Plan on attending, even if you aren't planning
to garden! You may change your mind! (Just for the record, we are still enjoying last years' harvest of root vegetables- three varieties of beets and our Jerusalem Artichokes. They remain beautifully firm, succulent, as well as flavorful!) 'Home-growns' are great treat!

In closing, we are encouraged to find people who are hungry
to be healthy! An appetite for the better things in life has been
long coming in Maine in many ways, nevertheless we are thankful
for all the hard places that are blessings in disguise. It is a privilege
to be part of the healing process of many who are in need. This is
what our ministry is all about.

3) Feature Article: "Body Chemistry (Part 1)- Acid vs. Alkaline"

In last month's LIVING Letter, I began a two-part article on
body chemisty, specifically addressing what is called 'pH'-
potential Hydrogren. (For an archive of this issue,
click here )
In chemistry, this is the measure of concentrated hydrogen
ions in a given solution and this measure reflects the acidity or
alkalinity of that solution. A measure less than 7 is considered
acidic, while a measure above 7 is determined to be alkaline.
Human blood ideally stays in a range around 7.3. Levels above
or below this range, however, signal adverse health symptoms
and disease.

By way of review, the role of the body's pH level is enormous.
It is accurate to say that pH affects all facets and functions
of the body. For instance, it
1) maintains healthy blood. If the pH is off, microorganisms
in the blood can change shape, mutate, become pathogenic,
and thrive.
2) facilitates oxygen delivery to the cells
3) controls the brain by helping to deliver glucose to brain cells.
4) helps control the efficiency of insulin delivery
5) controls the arteries and heart
6) controls enzymatic action in the body
7) controls mineral assimilation
8) affects every biochemical process in the body

The human body was designed by YHVH Himself to have an
alkaline chemistry, i.e. a sweet nature that is capable of neutralizing
acids. Alkalinity is realized foremost by proper diet. The diet originally
given to man for the care and keeping of the body as recorded in
Genesis 1:29 is a plant-based, vegan diet. Numerous studies support
the health benefits associated with this living plant diet, and
countless lives testify that a live food diet is the key to ultimate
health.

As previously presented, the average American lifestyle, coupled with
adverse environmental influences, produces a toxic affect on the
body and planet to such a degree that we are, in fact, destroying
ourselves. Accumulated toxins, be they sourced from foods,
personal care products, household cleaners or polluted water, air,
etc., turn our world (both personal and corporate) into an acid
environment. Acid, in nature, is caustic and harmful. An acid body
chemistry is not a healthy environment for the body and is, in fact,
a precursor of sickness and disease. It is true that poor stewardship
of the human body as well as the environment leads to destruction
and death.

Suffice to say, there is a better way to live! If we are to
experience life in the truest sense, we must make healthier
choices for ourselves. We must decide to reject a toxic, acidic
lifestyle in favor of a wholesome way of living that is instrinsically
alkaline. Natural ways are proven to be the best ways because
they are in harmony with YHVH and the laws of His creation.

Raising the alkalinity of the body is accomplished by making
healthier choices in life.
Some of these choices include:

1) LIVE FOOD DIET- Eat a raw, vegan diet of fresh fruit, vegetables,
seeds, nuts, and whole grains at least 85% raw, 15% cooked.
Avoid all processed, cooked, animal-based, and soy products.
2) WATER- Drink purified or natural, spring water. Avoid drinking
distilled water on a long term basis.
3) ALCOHOLIC BEVERAGES- eliminate completely
4) SMOKING- eliminate completely
5) FOOD ADDITIVES- avoid completely
6) FERTILIZERS, PESTICIDES, AND HERBICIDES- eat a diet
of organic food from a trusted ( preferably local) source
7) PERSONAL CARE PRODUCTS- use only non-toxic products,
devoid of chemicals and/or animal ingredients
8) PHARMACEUTICAL DRUGS- if possible, avoid them at all
costs. If you are currently on medication, consider healthier
alternatives...especially a healthier diet.
9) VACCINES- avoid them completely
10) HOUSEHOLD CLEANERS- use products that are non-toxic,
i.e. bio and eco-friendly.
11) HOME FURNISHINGS AND BUILDING SUPPLIES- use natural
woods, carpets, paneling, stains, paints, etc.
12) CLOTHING- wear natural fibers only: 100% cotton, wool or linen
13) AIR POLLUTION- chose and/or create a living environment that
affords healthy air. If necessary, invest in a good air purifier.
14) PLASTIC- As much as possible, eliminate plastic from your
life. Use glass or enamel ware for cooking and food storage, paper
or cloth bags, metal containers, silverware, etc.
15) TECHNOLOGY- Be selective in what tech devises to own/use
and, if possible, limit your use time.
16) EMFs- Protect yourself from harmful EMFs by investing in BioPro

17) NEGATIVE THINKING- Elevate your thinking process by
cultivating a sound spiritual life that is rooted in the word of YHVH.
Study the scriptures, repent of your shortcomings(sins), and pursue
righteous living.
18) STRESS- Eliminate unhealthy influences in your life, i.e. job,
activities, sports, or people.

As the above changes are implemented, causing a rise in alkalinity,
the body will engage its self-healing capability. Disfunctional, dead
cells will be replaced by new, healthy cells, causing the body to
rebound with a stronger immune system, greater energy, clearer
thinking, and 'sweeter' nature. Many emotional, mental, and
behavioral problems are known to improve or completely disappear
when body chemistry becomes more alkaline. Conditions like ADD,
ADHD, depression, and schizophrenia have been eliminated by
proper nutritional support. Surprisingly, rising incidents of crime,
road rage, domestice violence, divorce, suicide,and general aggressive
behavior (including war) have been linked to poor diet and inferior
lifestyle choices. These facts are a sad commentary of a once
moral, upright society. Given our nation's current SAD state of
affairs, one could rightfully conclude that we are a nation 'gone sour.'
The great American lifestyle has turned into a bitter pill that is
becoming more and more difficult to swallow.

This being said, it becomes increasingly obvious that body chemistry
plays a vital role in our lives, ultimately affecting what we think, say,
and do. Though merchants, politicians, religious leaders, and media
alike would have us believe otherwise, the affect of personal lifestyle
choices is a reality. We are products of what we eat, what we buy,
what we think, and what environment in which we choose to live. If
we are victims of our lifestyles, then we must amend our ways if
we expect to live. To improve quality of life, we must make healthier
choices for ourselves, choices that are based upon sincere heart-
searching and honest research rather than media hype. We cannot
and must not continue to accept the accepted 'acidic American
lifestyle' and expect to enjoy a healthy life. It does not work.

If we are to live and see our world change for the better, we must
save ourselves from our own self-created toxicity. We must rescue
our lives from the garbage can of a dead diet, dead belongings, dead
environment, and dead thinking. We must learn that body cells react
unfavorably to caustic treatment. They do not like to swim in an
acid bath, and they voice their displeasure of this inhumane treatment
by sending out signals of pain, sickness, and disease.

For the sake of superior health and simple self-preservation, there is
no better time than the present to develop a desire for what is good
and wholesome in life, namely that which is healthy. Educating one's
self to know the difference between what is healthy and what is not
can be a lifetime experience. Nevertheless, learn we must. We must
stop calling evil good by accepting a quality of life that is poor. It is
time to value life for the cherished possession that it is and to let our
thoughts, words, and deeds restore civility and sanity to the world. In
short, it is time to enter YHVH's kingdom and really LIVE!

6) LIVING Recipe: RAW WRAP

For many years I have enjoyed making live sandwiches by
wrapping up my favorite vegetables and toppings in large
leaves, preferably chard. Since eliminating chard from my
diet (because it has an acidic pH), I moved over to collards.
Until this time, I never knew much about collards nor did
I eat them. However, I have now discovered collards and
consider them as yet another wonderful, versatile green.
So, raw collard wraps have become a favorite of mine as
I invent new versions almost daily. Here is the recipe for
my original raw wrap:

2-3 large collard leaves
2 cups green cabbage, finely shredded
1 cup red cabbage, finely shredded
1 cup sweet potato, finely shredded
2 medium carrots, finely shredded
1 small red beet, finely shredded
1 small red onion or few scallions
4 Tbsp hemp or olive oil
1 fresh lemon, juiced
sprouts of choice
few Tbsp hemp or sesame seeds

Place shredded cabbage, carrots,beet, sweet potato in a mixing bowl.
Add finely chopped onion, lemon juice, hemp seed, oil, and toss
well. De-stem collard leaf. Lay one half of the leaf on a flat surface
and spoon filling on the leaf center. Top with a few spouts. Fold one
end of leaf over mixture and then roll the other end on top, wrapping
the leaf around the filling. Secure with a toothpick, if necessary.
Makes about 4 wraps, depending on size of collard leaves. Eat your
wrap while listening to some good 'wrap music' (whatever that may mean!).
